Wilkinson, her sister Gail Paterson and her husband Don died in hospital after they all ate beef Wellington cooked by their daughter-in-law Erin Patterson.
Donations collected at the memorial will go to the Austin Hospital, which is where Heather was treated before passing away.
Funds will also be donated to a charity hospital in Niger, which was said to be close to Heather’s heart.

Police are continuing to investigate the suspected poisoning, with all victims having displayed symptoms of poisoning by death cap mushrooms.
Erin Patterson has not been charged but police previously said she was considered a suspect in the case because she cooked the meal.
Patterson told police she had made the beef Wellington using button mushrooms bought from a mainstream supermarket, and dried mushrooms purchased from an Asian grocery store.
