Co-workers and customers rushed to the 55-year-old man’s aid when he was knifed multiple times in the lower back, chest and shoulder at the Haymarket branch about 9.20am today.
A 37-year-old man “well known to police” was arrested and has been charged with wound with intent over the alleged attack with a “bladed knife”.
A spokesperson for NSW Police said the man was facing a “substantial custodial sentence”.
His alleged victim was in a critical condition when he was rushed to St Vincent’s Hospital.
He has since undergone surgery and is with family in the intensive care unit in a stable condition.

Service NSW said the Haymarket branch will remain closed today and tomorrow as staff work with NSW Police investigating the incident.
“The welfare of our staff is our highest priority,” a Department of Customer Service spokesperson said.
“Every possible support will be made available for this staff member and his family.”
“All other staff at the centre are being offered counselling and support.”
