Officers were driving along Westbury Street at Davoren Park when they spotted a motorbike travelling at high speed around 8pm.
When police began following the motorbike, the allegedly unlicensed driver accelerated to over 100km/h in a 60km/h zone.
PolAir followed the speeding rider through the northern and north eastern suburbs for five and a half hours.
“During this time police will allege the rider disobeyed a number of red traffic lights and reached speeds in excess of 100km/h over the speed limit,” police said in a statement.
But the high-speed chase all came to an end when the rider stopped to refuel on Crisp Road at Elizabeth Downs with a jerrycan he’d been carrying about 1.30am.

Police quickly swooped in and arrested him at the scene.
Witnesses were woken to the sound of a loud bang and were stunned to see the suspect arrested outside their home.
“I just heard shouting and banging and then I came outside and I seen someone on the ground,” Fred Dominic said.
“Between 20 or 25 cops were outside and I was surprised then I see a guy was on the footpath.”
The 34-year-old was charged with multiple offences, including driving at extreme speed and driving to escape police.
